Anyone have any good Tapas recipes please?

We have just come back from Spain and would love to hold a Tapas evening.

Any help or ideas on what to serve please?

Aubergines in a light batter, pork in a tomato sauce, tortilla, salted fish, Morcilla(YUM!). The list could go on and on. love the Spanish style of going out for loads of different dishes and gallons of wine while kids run riot. Happy days.
All must be rounded off with 103 brandy

Ham is easy.

There are some nice cooking sausages, not just chorizo, but also morcilla (blood).

Chicken in white wine (pollo al Ajillo) is nice. Spanish omelette, patatas bravas are cheap and good.

Ooh - wonderful idea!

We had a tapas starter tonight - a few slices of chorizo and some king prawns sauteed gently in olive oil, garlic and chilli. A few shallow bowls of that with some crusty bread would be nice and easy to do.

Tapas yum. Can't do a tapas night without boquerones or aioli and bread.

Easiest ever potato bravas:fried potatoes topped with hot Old El Paso salsa. It really works.

I can't wait for my holiday.

You can buy boccoranes (SP?) in most supermarkets - waitrose ones are yummy. Meatballs in tom sauce, whitebait and calamari are easy to do (use the same method for whitebait), aubergine gratin (cook in in tom sauce with garlic and herbs, add lots of cheese of top and grill), ham, chorizo, manchego cheese, olives, bacalao, chicken croquettes.

Paella is easy to do and you can make a few different versions - seafood, mixed, meat, with or without rabbit...
