growing beetroot and eating the leaves

am currently growing some beets in my garden (1st yr novice). have recognised the leaves as the yummy ones you can buy in mixed bags of lettuce, i think! my questions are:

can you eat beet leaves in a salad without cooking em first?

if i take one leaf off each beet plant will it effect the beetroot growing?

am i better off waiting until the beets are ready to harvest and then boiling the leaves like cabbage?

You're better off picking a few young leaves form each plant if you want to eat them raw.

The older leafes will be better cooked (like spinach)
