Using up Stock

I have loads of chicken stock, we're having risotto tonight, but other than soup that's all I tend to use it for.

Don't really fancy soup, so any suggestions please?

I often use it as a base for a casserole
But leftover I freeze in small portions to make gravy, add to next risotto etc

What about a thai/vietnamese style soup? Usually seems to involve chicken stock, with noodles, chilli and coriander.

But re the stock, I concur - freeze it, one big bagful for quick soup sometime, and a few icecube bags so you can add cubes to sauces etc.

The other thing would be to make the base for Gordon Ramsay's quick chicken & prawn pie - take stock, reduce by half, add a good few glugs of white wine, reduce by half, add cream, reduce till creamy enough - the actual recipe requires that you poach the chicken and prawns in the mixture but you could do your reduction, freeze it, and fix the rest later maybe?

freeze it in ice-cube trays and just add to anything requiring a (savoury) sauce, casseroles, gravy, curry, soup, pasta sauce, the cooking water for rice and couscous etc etc etc
