Making cupcakes the day before an event?

I have offered to make a load of cakes for a children's centre launch and wondered if i made the cakes before would they taste nice the next day? Would you ice on the day?

Plus, does anyone have any tips on how to stop the cakes being try and crumbly? Mine tend to go a little hard after they cool down, even though i always follow the recipe!

Any tips very much appreciated

Take a look at this thread - My recipe is nice and I make them the day before needed and they keep lovely, even with the frosting on.

Cakes often go hard after they've cooled down, but keeping them in an airtight container overnight usually softens them up nicely.

Personally I think that sponge cakes always taste nicer for having rested for a day or so.

(Except when you eat them hot hot hot out of the oven with custard or icecream...)

I have made them from the link in Stirlings post - the recipe she gave me in that thread and they kept fine for a couple of days in the fridge (iced) in an airtight tin - they are nice and moist and didn't dry out at all.

Have copied and pasted the recipe onto word and printed it off. Going to have a practise this weekend, opening isn't till June!
