200g mascarpone - best before TODAY

Used a big dollop in a tomato risotto last night, now have nearly a whole pot left.

We are vegetarian, and supposed to be on a diet - any suggestions? Would it freeze??

I would use it with pasta and bacon and broc - it makes a creamy sauce

you could use other veggies instead of the bacon

def tiramisu and sod the diet. Nigellas Irish cream trifle (tiramasu realy) is amazing.

Ooh, great suggestions, thanks. Yeah, had thought the diet thing might not be compatible with mascarpone! Will put suggestions to little cook DH and get started.

In soup? (Spinach and watercress, say.) Then that will freeze.

Whisk in some Grand Marnier (it sucks up a surprising amount ...) and put on strawberries. really good!
