I've got a big bag of Jersey potatoes I need to cook today before they go funny, has anyone got any recipes which are freezeable?

Can't you make them into a yummy potato salad for the rest of the week? Seems a shame to put them into a casserole or bombay potato type dish when they are so yum.

Don't know how big your bag is but I'm sure they will last longer cooked.

Yep they should, shouldn't they. Have you got a good recipe for potato salad? Also do you think I could cook them then freeze half of them or can't you freeze potatoes?

Bit clueless when it comes to freezing things!

Yep you can just cook them all up and keep some in the fridge to use this week and the rest in the freezer. Once frozen best way to cook them again is to bung them frozen into a very hot oven drizzled with olive oil and sprinkled with salt, pepper and cruched garlic. Lovely mini baked potatoes.
