Can any of you suggest something nice to cook that doesn't include vegetables...

...other than root vegetables?
My friend has colitis and can't tolerate anything fibrous, so can only eat root vegetables.
Just want some fresh ideas please for a main course with root veg and any meat or fish of your choosing...?

I always make it with butternut squash rather than pumpkin as I prefer the taste and they're a bit easier to cut through!
