new potato bake type thing?

I seem to have about a billion new potatoes that want using up.

Does anyone have a recipe or bright idea for a sort of main meal potato bake type thing, or indeed, for anything else I could do with them?

I like the idea of a bake as nobody is that keen on them just as they are... hence why I have so many

New potatoes - are they small ones? I ask as my new ones that were delivered last week were big ones.

I do new potatoes with olive oil and rosemary roasted in the oven.

If they are normal sized spuds I have loads of ideas!!

Slice them up and layer them in a dish with onion, garlic, bacon if you have any, any other veg you want to chuck in. Season and pour cream over them. Or you can do egg and milk mixture, or stock, or add cheese...

Bake for 30-40 mins

i did a lovely new potato bake on friday. Grease a cassarole/oven proof dish and preheat oven. Slice pots, leaks, parsnips and grate some cheese. Start with a layer of pots and sprinkle some cheese. Then lay leaks and parsnips. Repeat until you fill the dish. Cover will foil and bake for 30mins. While it is in the oven, peal and quarter an onion. Pour half pint of milk in a pan and add the onion. Bring to the boil then simmer for 3mins. When the bake has bden in thd oven 30mins, strain the milk and pour over. Sprinkle cheese on top and continue to bake, uncovered for 30mins.

This is a bit like claireybee's suggestion and is gorgeous - leave skin on potatoes, slice up, parboil, layer in the bottom of largeish dish. Sprinkle with parsley and pepper. Slice & soften an onion in a pan with a little butter, layer half of them over potatoes, then add cod or haddock fillets (deboned is best, no need to break up) - 1 per person eating as a rough rule of thumb. Cover the fish layer with slices of bacon. Add another layer of the rest of the sliced onion. Bake at 180C (GM. 4) for 15 mins, then take out of oven and cover in double cream. (3-400ml for 4 people), and add more pepper, then bake for 30 mins. Finally drizzle over melted butter & sprinkle more parsley and return to oven for 5-10 minutes.

It's FANTASTIC.

Well I made CherryChoc's fish & potato thing this evening - didn't have any parsley but put garlic in with the onion.

I can confirm... It's FANTASTIC.

DD had not only seconds but thirds of it, and normally she eats like a bird. Apparently it's the best dinner she's ever had!
