Melt the chocolate with a bit of butter and a dollop of golden syrup if you have it. Beat in the icing sugar and an egg for chocolate ganache of sorts!

My favourite filling for chocolate cake is from a Jamie Oliver recipe for a chocolate party cake.Scatter the top of the bottom layer with raspberries and/or strawberries; cover with lots of fairly stiff whipped cream and then plop on the top layer. You then melt 100g each of butter, chocolate (at least 70%), icing sugar and 3 T milk in a bowl over simmering water. Once it is meltes, stir and let it cool. It can then be drizzled over the cake. It can be messy, so I put a baking tray underneath to save my work tops!
Happy baking!

Oh no, not butter icing, please!

There are so many nicer fillings for cakes, like chocolate mousse, or cooked fillings, or even just whipped cream and chocolate.

creamy chocolate filling:

put in a saucepan:
2 cups sugar
half a cup of cocoa

beat and add to the sugar mixture:
1 egg
1 cup milk

stir and cook this all to the soft ball stage, then cool while beating with an electric whisk until it is the right consistancy to spread

Gosh, I love butter icing, a classic
But will concede there may be more exciting ways out there

Icing (which is very yummy)
50g butter / margarine
25g cocoa
2 tbsps milk
225g icing sugar

Melt butter, add cocoa and cook for 1 min. Remove from heat and stir in milk and icing sugar. Beat well and allow to cool a little.

Makes enough icing to sandwich two cakes together and then cover.
I then decorate with smarties, minstrels, buttons etc.
