Cheese sauce? How do you do it?

I keep messing up my cheese sauce, it won't thicken! How do you lovely people make yours?

Make sure you take time to cook out the flour.

Melt butter (large tablespoon) then add a tablespoon of flour mix over a low heat for a few minutes. Then add milk, very gradually at first.

ounce of butter - melt
add one onuce of flour, mix and heat for minute until all flour is coated with butter,
then gradually mix in milk, whisking all the time until thick enough ( about half pint normally)
Then allow to cool slightly before adding grated cheese.
I am rather good at cheese sauce!

i spoon of butter, melt that.

one spoon of plain flour. whisk that in.

wait at least a minute for flour to cook.

pour in milk bit by bit until thick. wait a while between sloshes to see how thick it gets.

add cheese to thicken further. the longer it sits the mor eit thickens anyway so i leave it runnier than i'd like then it thickens up on serving.

Sounds like you haven't used enough flour or cornflour, and you're using too much milk.

I melt some butter, take it off the heat, add the cornflour to make a paste. The slowly add some milk, return to heat and add more milk. Heat and bring to slow boil, adding more milk as needed.

I don't bother anymore...I do a Jamie trick of mixing cremefraiche with strong cheese and a bit of mustard and stirring it into the dish. Works unless you want a lot of sauce.

i'm too lazy.. I jsut use a tub of half fat cream fraiche, some grated chedder (and parmisan if I have it) and sometimes a bit of sqeezie garlic...no messing about with cooking the flour. .. low heat until the cheese has melted.. easy peasy.. or lazy whatever

Cheats method:

mix 1 mug grated cheese, 1 tablespoon flour (and sometimes a bit of paprika) in a saucepan making sure flour is evenly distributed.

Add 1 mug milk and stir well, add teaspoon of butter & bring to boil stirring frequently/all the time.

When thickened add salt & pepper.
