Soft shell crabs

Got some frozen soft shell crabs, planning to make soft shell crab hand rolls.

Anyone dealt with frozen soft shell crabs before? Just defrost and tempura (is that a verb?) with salt, flour and pepper?

Also DD is 21 months and doesn't like the sushi rice (too sticky?) and doesn't much like raw fish either. I could make smoked salmon nigiri but she'll just squish up the rice and only eat the smoked salmon. Any suggestions for toddler sushi?

I'm not a big fan of the soft shell tbh. i'd prefer no shell at all, and so would DC.

I am not actually sure what soft shell crabs are. I presume they are not the ones that infest one's nether regions....
