Help with my 20kg gammon-urgent!

Evening

I have a 20kg oak smoked gammon in cold water in my bath. My whole menu for feeding 50 people inc kids at dd's 1st birthday party tomorrow at 1pm revolves around the ham! I forgot to defrost it until c.330 today but it looks like it's thawing well. Have recipe from mil from Delia which says we have to boil it for 45 mins then roast. Even if I cut into 4 I don't have pans big enough to boil it. How long does it roast for? I am panicking. Please help.

20kg Thats twice the weight of my dog, blimey, that pig must have been a stonker. Sorry I don't know how long to cook something that large but I googled and found this www.deliaonline.com/recipes/baked-sugar-glazed-whole-gammon,1167,RC.html so I think you will have to be up horribly early

That is 50lbs of pig - so 1lb per person! Yum!

In the bath now, is it wrapped in anything or is it exposed to the water? If it's exposed and therefore getting a good soak then I would skip the boiling part and move straight along with the roasting, although you'll need to bast.
Can you fit it all into your oven at once? I would cook a 5kg piece for around 3 hours at about 170 in a fan.

Cut into smaller chunks and just slow roast - glaze with honey and cover halfway through cooking.

Thank you for all your help. I meant to say thanks earlier but was busy with the party & clean up! We cooked it in 6 bits & it tasted great. And it all got eaten!? MM [WINK]
