Can I freeze risotto?

Hi

I make a pretty good mushroom risotto (so DP tells me ) but we always end up having it twice in the same week to use up all the mushrooms. You can occasionally have too much of a good thing, and to be honest sometimes risotto can be a bit of a faff, so if I make a massive pot tonight is there any reason why I can't put some in the freezer for instant pleasure another time?

It doesn't freeze well unfortunately in my experience.

Could you do a stroganoff or something else to use the mushrooms up?

Well I do but then DS and I are not that fussy. It does go a bit claggy I'm afraid but i OK in an emergency.

I freeze it for ds who doesn't seem to mind, but the texture is definitely different.

I freeze risottos, but save a bit of stock for re heating.

It's not great stealth! I found it has the consistency of ready-mix concrete!

Like risotto reheated.....but even gloopier...
What you could do with left over risotto is what they do over here and roll the rice into little balls and then in breadcrumbs and fry...."arancini" a Sicilian speciality...

Bucharest is right. Lovely little rice balls, often with a bit of mozarella poked in the middle. Yum.
