Lunchbox chicken.........

I am a veggie - dont know how to cook meat fish etc.,DC love chicken,fish- what do you do to cook them so they can be taken in the lunchboxes.I would like like them to be done over the weekend and preferably a bit spicy so they can be packed for DH as well.

I am bit stuck with lunch box ideas as well -presently cheese,carrots or supermarket bought cooked chicken slices with butter,chocolate spread is being made but I think everyone is getting fed up understandably.Please help...........

This is a nice way to do salmon and you can put a bit or alot of paste in for the flavour/spice.

For chicken, mix together
150g plain yogurt
2 crushed garlic cloves
1 tsp grd cumin
1 tsp chilli powder (optional)
pinch turmeric

Score 4 chicken breasts and then put into the marinade for an hour, or overnight if you can.
Heat oven to 200/180fan/gas 6. Place chicken on baking sheet and bake for 30 mins.

Taste lovely chopped up on sandwiches or in a salad

I know it's a bit of a treat but I sometimes buy one of the ready-cooked rotisserie chickens from supermarkets and then pull all the flesh off and store it in the fridge, then make chicken and salad wraps for DS's lunchbox with it. You could spice it up with sweet chillie sauce, mustard, other marinades/relishes etc for your DH.

Other lunchbox ideas:

couscous salad

hard boiled eggs

bagels

wraps

fillings could includelives, tuna, cherry tomatoes, sweetcorn, finely chopped/grated carrot, different cheeses, chicken, pickles, hot dogs, sausags, fish fingers, smoked salmon, apples...
