Pepper and Goat's Cheese tart???

I know how to do the pastry, but how do I do the filling? I'm having a complete mental block...

I've got red onions, peppers and goats cheese. Do I roast the peppers first, then put them on top of pastry with onions and cheese. Then what? Do I just tip a couple of beaten eggs on top, or does it need milk/creme fraiche/cream cheese or something? I don't want it to be to 'quichey' if you see what I mean? I can't seem to find a recipe to match my 'vision' Any ideas??

It depends what kind of tart you are doing.

I'd just lightly fry the onions and roast the peppers. I wouldn't cut the peppers smaller than quarters.

Put the onions at the bottom of the case, peppers on top and then a largish piece of goats cheese and cook till the cheese is melted and bubbling. I wouldn't bother putting in anything else.

This is nice too - use puff pastry for base, then spread a thinish layer of pesto, add grilled peppers, red onion, goats cheese and small cherry tomatoes and bake. Yummy.

Even my Mum who hates pesto likes it!
