Need new ways to use roast chicken leftovers please

I need some inspiration. We had roast chicken last night, and am drawing a blank about some tasty ideas about how to use the leftover meat. Yummy suggestions appreciated!

In sandwiches with avocado and good mayo?
I just finished my roast chicken off by shredding the meat and putting it into a salad with chickpeas,tomatoes,coriander,cucumber,finely sliced red onion and home made dressing.

Or soup?

Mushrooms, chicken and garlic in a pan with butter. Make a cheese sauce (instant is ok)
Boil pasta
Smoosh together for delicious garlicky pasta-fest

nigel slater's roast chicken risotto is very good (from his real food book)!

another nigel slater recipe - mix leftover chicken with double cream, mustard & grated cheese. stick it in a large shallow dish & cover with breadcrumbs. stick in the oven for about half an hour (sorry, quantities/timings aren't my thing....). or make a chicken pie.

moondog, I'm wanting to come and eat at your house again...

Just sandwiches with fresh bakery bread, butter and mixed salad would do me. We never have any leftover meat by next day, the carcase is picked bare by scavenging fingers...

fry onion with garlic, add chopped up chicken pieces and mushrooms, make roue and white sauce in same pan, serve over rice with green veg (or add frozen mixed veg and put in a pie)

use chicken carcass to make stock / soup (lots of carrots), eat with rice or vermicelli

A kind of Oriental Chicken noodle soup.

A bit fiddly but don't be put off it is so healthy and my kids love it.

Make stock with left over bones.
Soak noodles in boiling water
cook a few peas of small cubes of carrot or what ever you have hanging around. Mixed frozen veg is OK.
a few handfulls of beansrpouts
a few handfuls of fresh basil/corrainder/mint in a bowl on the table

put cooked chicken in bottom of soup bowl add beansprouts and noodles and veg and pour stock on top.

Let kids add herbs and a dash of soy sauce and eat with chopsticks. If you have trouble with the chopsticks fix them together with an elastic band and push it down to the middle this was the chopsticks are smaller, they don't fall apart and the kids love the fun.
