Carrots Carrots Everywhere

The carrots in the fridge seem to be multiplying as there were 6 last week and now there are over 20.
What can I do with them? I am sick of soup.
Any suggestions? Anyone want some??

I like carrot salad with raspberry vinegar and raisens or cumin seeds, coriander and chilli oil.

Carrot cake is lovely - I can find my mum's divine recipe if you like?

carrot sticks are a good excuse to have lots of dips and wine.

I have never made a carrot cake. Maybe now I should try.
Carrot mash? Never tried that before.
As for the carrot salad..I just ate all the respberries.

carrot cake is very easy and very tasty.

carrot mash is easy, or just mix some into potato mash

grated carrot and cream cheese sandwiches

Carrot and turnip, just mash together with salt, white pepper and bit of Lurpak

I do a sort of red lentil cury with carrots

Chop an onion and some garlic, fry off

Add some diced carrot (1 per person)

Add spices (curry powder, turmeric)

Add lentils

Cover with veg stock, bring to boil then simmer for about 20 mins

Serve as a side dish or as a main with rice and naan bread

It's my bread-line dinner

Roasted carrots are surprisingly nice (and reduce a great deal, so you can bung loads in) - chop up into 2-inch lengths, toss in oil and seasoning, roast for 30-40 mins until brown; add toasted pine nuts and feta, and some cumin.

How about making a drink out of them?

Tomato, celery and carrot crush
1kg carrots, chilled
3 stalks celery, chilled
500g tomatoes, chilled
Tabasco sauce, to taste
seasoning
crushed ice, to serve

Push carrots, celery and tomatoes through a juicer
Alternatively, whizz in blender with 250ml iced water and press through a strainer
add salt and papper and tabasco to taste.
Serve over crushed ice.

we cut carrots into little rounds and toss in melted golden syrup and a little bit of olive oil-fab, fab side dish!

i've got the same problem.
I'm solving this by making the following tonight:

2 carrot cakes: 1 for the NCT sale and 1 for us

Lentil and carrot gratin which uses up 2 large carrots or 4 small carrots.

Also making carrot soup over the weekend for 4 people and that normally uses up over a pound of carrots.

oohh carrots in golden syrup.I usuually use honoey but your way sounds much nicer. Its that and soup I think, and some cake. Thank you
