Roast veg and ...?

Have lovely veggies for roasting tonight. What can I do with them to sate DP who will be ravenous, but takes no effort and won't mean a trip to the shop?

In our house it would be roast veggies and a chop, or roast veggies and sausages

About a ton of butternut squash, courgette, carrot, turnip (I roast it - nice, honest!), peppers and onions.

I have pasta and rice and potatoes, and various spices and storecupboard stuff etc. Trying to avoid meat bedcause we're eating a bit much but can stretch to canned tuna if required

Add potatoes to it for the carb element, and how about a simple cheese sauce to pour on like with cauliflower cheese?

I like roast veg with lovely caramelised onion gravy, and maybe some humous and pitta bread as a starter.
