hello.

My mum is having a big party for her 60th birthday and has asked me to make the cake [dread emoticon]
as the cake will need to spend 8hrs in the car while we drive to cornwall and feed 70 people i am making a double layer brownie cake,so its nice and solid and only a small piece will be needed each. i plan to sandwich the layers with chocolate fudge icing, and coat it in a white chocolate icing that will set so as to make it easier to deorate and transport. (it has to share the car with all our camping equipment too, i dont fancy nursing it on my lap)
anyway, my problem lies in how to make the icing? do i just melt the chocolate and pour it on? > do i add cream? I dont know. do any of you have a foolproof recipe i can steal? thanks

haven't tried it myself but looks like it might do the trick.

Your cake sounds yum!
