streeeeetching one roast beef joint.

sunday guests cancelled so i had one huge 3 rib of beef for 2xadults 2xkids under 5.

S i have stretched the meat to cover the rest of the week, feeling very smug.

Sunday-roast beef, huge amounts of lovely beef.
Monday-cold beef and baked pots.
Tuesday- cottage pie
Wednesday-chilli con carne
Thursday-rissoles(saint delia recipe)
Friday- Anything but beef

Made up all the dishes today, will i kill the family by thursday or should i freeze them

Well done you! DH always buys a huge joint of beef, which scares the pants off me, when he tells me how much it costs, but then he proceeds to feed us for a week!

I think I migh put the rissoles in the freezer personally, the chilli will be fine in the fridge for Wednesday.

so what else could i have made with left over beef?
i really like the idea of a big sunday roast, a bigger joint seems to cook better, and if it can stretch i don't feel so guilty about the gluttony/expense.

It will be fine left out.
To my mind nothing finer than cold thinly sliced roast beef thoguh.I'd happily eat it 4/5 nights on the trot.

TBH, DH makes much the same as you, but he's a fussy arse and won't eat the same meat 2 days running, so it goes in the freezer, in single portions, for a quick meal later in the month! The only other thing he does, is a stir fry, usually on Monday or Tuesday. His cottage pie is legend too! He uses all the left over veg and even slices left over roasties for the topping!
