Pasta with mushrooms, grated courgette, spinach, pesto and toasted sunflower seeds. Takes 10 mins.

Chicken stir-fry - chop up whatever veggies you've got to hand while the water's boiling in a pan, then stick the rice onto boil and the chicken in a hot wok. Once the chicken's browning, throw the veggies in and keep it all moving so it doesn't burn. You can scrounge up a sauce yourself or cheat - I highly recommend the Uncle Ben's Soy and Sesame stir-fry sauce in a sachet . It takes about 15min from start to finish.

Fajitas
Just stir fry some chicken, red peppers and onions (chopped very large so no real effort), spread wrap bread with salsa and mayonaise, and there you go. Takes no time and dd is always guaranteed to eat it all.

Once a week we have pasta. We throw some frozen spinach in to add vitamins and iron.

And another lazy day of the week we have fish and cous cous. Frozen fish filets, just put them in foil paper with lemon and herbs in the oven for 20 min. In the meantime boil the kettle, pour water into couscous, stand for 5 min, add olive oil and any veg we have in the fridge.

Cook pasta with frozen peas & small pieces of broccoli - then toss all in philadelphia cheese or creme fraiche plus grated cheese on top.

Stir fry using prawns (or cooked chicken or tuna for DCs), ready chopped veg and noodles.

Pasta (ravioli with spinach and ricotta gets in veg and cheese) - my DS likes it with philly stirred in and a big blob of pesto. Fishcakes. Baked beans on toast with cheese on top. Make a big bolognaise type sauce and serve it with pasta one day, add some kidney beans and serve with rice or potato wedges. Risotto (that risotto pronto stuff is dead quick)
