keeping roast potatoes warm

Anyone know how to keep roast potatoes warm like they do in a restaurant or do they cook them and let them go cold and reheat? If so, how do you reheat without burning?

In restaurants the "roast" potatoes are pre-boiled then deep fried to order.

I used to work in pubs, and you can either cook them freshly to order (takes ages obviously), keep them warm in an oven (makes them dried out and nasty) or pop them in the deep fat fryer to perk up a bit. The only way to do really nice roasties is from fresh each time I think, though this does take ages.

Goober did not know that, didn't want to fry them.
ruby do they burn if you have them nice and crispy the first time or should you slightly undercook them the first time?
