What can I do with 6 green peppers?

Darn Riverford. Also have some spring onions and purple sprouting broccoli that needs using.
Any ideas welcome please?

A delicious Spanish salad : salpicónde marisco.

You need green peppers, onions (can use your spring onions), tomatoes, plus some sort of cooked, cooled, seafood or fish. It works really well with a mixture of cod/hake and prawns. Or you can just use tinned tuna or salmon.

Chop up the veg quite small, about 1cm pieces. Then add your fish. Make a very vinegary dressing (about half and half vinegar and oil). Add the dressing, then cover and chill the salad for at least an hour, to let all the flavours mingle.

Serve with crusty bread.

For 4 people I'd probably use 1 pepper, so this won't get rid of them all, but it's a start!

Stuff them with a spicy risotto/tomato-ey sort of mixture and bake.

Or take up juggling

Soup: Roasted green pepper and broccoli soup with a spring onion garnish?

Rapid refried beans with added broccoli and more peppers than usual? In fact ditch the beans and just use peppers
