Parsley glut!

I thought I needed a lot of parsley. I did, but not 5 large pots! What shall I do with it all? Any ideas?

Is there not some exotic dish that nobody ever makes because nobody ever has a lot of parsley, like Parsley Soup, or Parsley Jelly, or Parsley Cake, or even Parsley Pesto?

You could make parsley pesto, but to be honest parsley isn't that nice in large quantities is it?

I practically grew up on tabouleh. It's nice enough, but I think my mum OD'd me on it - I have no desire whatsoever to make it myself!

Agree entirely that large quantities of parsley on their own are not nice - but tha's why I'm looking for a recipe, rather than trying to make one up.

I have a vague recollection of reading about some sort of Victorian pickled parsley relish, but I don't know where I read it.

Salsa verde
You can do it with just parsley or with parsley, basil and mint and perhaps a spot of tarragon, too.
Not just good with oily fish, also gorgeous with lamb, or with cold chicken or turkey. I love it with baked potatoes too.
