What is wrong with the bread??

DP started making bread lately, tons of different attempts is now making very tasty bread, BUT it;s nowhere near as 'soft' and 'airy' as the bread from a bakery, any tips?

additives and e numbers. Chuck in something that's been genetically modified as well.

How are ya VS? Not seen you around for a while?

took me aaages to get it right and I still make the odd brick loaf. It is different to shop bought stuff, but in a good way though.
