will this make a hot cross bun & butter pudding of sorts?

I can't find the Jamie Oliver Sainso recipe but know it was dead simple - and everything I'm finding online looks a tad more confusing than I can be faffed with.

So will this work?

Butter the Hot X buns, put a blob of apricot jam on each, sprinkle over chopped dried apricots and sultanas, pour over a tub of vanilla custard and bake.

does that sound feasible?

Sounds good to me. I might cut the buns up a bit more though iyswim.

you mean not just in half? into smaller chunks? I guess it doesn't matter if the crosses are no longer visible...?

My MIL made this at easter. It was lovely, except she used marmalade which was a little bitter IMO. Apricot jam would be perfect I reckon.

I made the Jamie Oliver pudding at Easter and was disapointed tbh,it was very bitter using marmalade.Lemon curd, jam or choc would have been much nicer.

Just found this:

Bun and Butter pudding or this:

Serves 4, prep time: 20 minutes, cook time: 20 minutes

  1. Try spreading Sainsbury's marmalade on halved Sainsbury's hot cross buns and place in an ovenproof dish.
  2. Pour over enough Sainsbury's Taste the difference vanilla custard to almost cover the buns and allow the custard to soak into the buns for about 15 minutes.
  3. Bake in the oven for 15 minutes at 180˚C, fan 170˚C, gas 4.
  4. Finish by placing under a hot grill for 5 minutes until golden brown.

So what you've got in mind I think would work fine - sounds yum!

thanks chaps!!

It's for the in-laws, coming for lunch tomorrow ... so god forbid I should go to too much trouble (as I would then be a seething mass of resentment all day) .... yet god forbid that I should expose myself to any criticism by not making something that looks and tastes impressive

It's a fine line, I tell you.
