Leftover roast lamb

Anyone got any good recipes to use up the remains of the lovely leg of lamb from Sunday?

Lamb is lovely stir fried - sounds a bit weird but it's what they do in Mongolia (honest )

plate the lamb, sliced. open jar of mint sauce.
eat with fork.
