I second sweet potato curry. Particularly with spinach and coconut milk.

Or ratatouille.

Or tomato, butterbean and onion stew with smoked paprika.

Or a bowl of puy lentils with cherry tomatoes, roast butternut squash, feta and parsley mixed in - not freezable but completely restorative and delicious. Roast butternut by itself would be freezable and then could be used in lots of ways eg fritatta, soup and so on.

Or cook portions of rice and freeze individually - they can be turned into egg-fried rice with frozen veg in a couple of minutes.

Lentil & chickpea stew
Mushroom loaf
Veggie mince/chilli

Muffins are great for a quick snack when you're too busy with the baby to eat properly (I know I didn't!) and also freeze very well, savoury (spinach & cheese, broccoli etc.) or sweet (apple & cinnamon, banana etc.)
