What would you serve it with?

I have a recipe I've been wanting to try out for a while but have no idea what to serve with it

Has anyone got any tasty suggestions that won't break the bank?

TIA

I very often just have it as a main meal at lunchtime with some crusty bread and cheese.

thanks Cies, my oh would love that & you've just made deciding what to have this evening a lot easier . . . . off to make a fresh loaf

Good with couscous, pasta, rice, ebly, etc with parmesan grated over the top. also good with fish, chicken - any bland protein. It's gorgeous stuff, isn't it?

add anchovies or anchovy essence at beginning! You won't taste fish but it makes it fantastically rich..

we have it with couscous

I also put tapenade or black olive paste in, for similar reason

I've never heard of adding anchovies or black olive paste, will give those a go.

Have only ever eaten ratatouille out a couple of times but saw the recipe & thought I may as well give it a go as I know it'd go down very well here

It's lovely with fish, particularly Monkfish tail grilled. We also have it quite often with garlicky cream cheese roasted chicken (pkt of Boursin stuffed between skin and breast, then roast as normal). I also sometimes put chopped chunks of Chorizo into the ratatouille and serve with crusty bread.

well, it went down very well as it was with the fresh bread & cheese. My oh went back for seconds

Will definately be trying some of the other suggestions now over the next couple of weeks!! I have some fish in the freezer I may do it with next week in fact

Chunks of chorizo sound a good idea too, I had no idea it was so versatile!
