Never cooked a leg of lamb before - Help please?

Hi,

I have bought a leg of lamb for Easter lunch but have never cooked it before.

It's 2.5kg in weight.

Any good fool proof recipes please?

Indeed!

Make lots of slits all over it, with a sharp knife, then stuff a peice of garlic and a sprig of rosemary in each. Throw it in the oven for no more than 2 hours max, at about gas mark 6. It'll be beautifully pink on the inside and have a lovely flavour!

I cooked one for first time yesterday using Nigella's recipe (from Feast) although i didn't have time to do the full overnight marinade. This it was 35min per kilo to be still slightly pink inside, cooked quite high - 220 I think.

Think the marinade (I only had an hour or so to do it but was fine) was olive oil, juice of a lemon, 2 bay leaf, 6 spring onions, some garlic cloves and torn up mint.

Made a saffron infused gravy with the juices afterwards with some redcurrant jelly added also.

Served it with sticky garic potatoes (cook mini new pots for 30 mins; thrown in dry pan with about 8 squished cloves of garlic, and bash to split some of pots and garlic open; then put in ht oil in oven for 30 mins - turn after 15min), some fresh minted, buttered peas and some mangetout.

DH and friends said it was lovey
