Fudge!

I made vanilla walnut fudge last night. It's firm but very sticky and it has a slight tang to the taste. It was definitely the right temperature (unless my jam-making thermometer is wrong) and I gave it a beating after I took it off the heat.

Any ideas what might have gone wrong?

Also is it possible to make it in a microwave - it took hours to get it up to termperature on the hob.

oh my daughter makes fudge in the microwave

when she gets back will ask her for the recipe - I know it uses gallons of condensed milk, mmmm

I return - ok, she says:

125g butter, 2 cups caster sugar, 1 can condensed milk (397g)

place in large (and it does need to be very large because it all gets very excited in there) cook on high for 5 minutes stirring every now and then

a further 10 - 12 minutes (again stirring now and then)

it's ready when it curls inwards from bowl and is light brown in colour!
