No need for water!

Beat eggs, season, then throw into a hot pan with some butter/oil in it.

Stir a little bit, bringing the sides into the middle and pouring the liquid to the sides.

At this point add any other ingredients, like cheese or ham. (If you're using ingredients like mushrooms or onion these need to be cooked first).

When liquid has set it's cooked.

Will take you no more than 2 minutes.

So do I keep it flat or flip it? God, I'm so embarrassed!!

fold one edge over the other or I fold into 3 - ie one edge to the middle then fold the thick part over the remaining thin bit and roll out o the pan. This is so simple to do but hard to describe in words !!!

so no flipping then? and abouts 2 mins total cooking?

You might want to remember to add milk, it's not just eggs..

Oil should be smoking slightly before you put in eggs. This is a Delia tip that transformed my omlettes!

No need to add milk either, unless you just want to make the mixture go further.
