Fancied making a chicken pie as alternative to the normal boring chicken receipe my family have. Anyone have any good ones that are suitable for freezing?

I'd make the filling and freeze it.
Then just make puff pastry squares to bake separately. and just pop them on top once it's on the plate ready to go.

I normally do one of two fillings.

Roast and shred chicken.
Steam some broccoli.

Whilst the above is happening make up some white sauce with white wine.

Saute mushrooms and an onion,
add chicken and broccoli.
Add to white sauce.

Or make a white wine gravy to go with the above meat and veg.

The chicken pie recipe on JO's Ministry of Food is good. Cook chicken thighs with tomatoes, carrots, onions and white wine. then freeze the filling. When you defrost you can a the pastry to before cooking. It is yummy

If you want your pie with pastry, just make the filling and freeze it (whether tomato based or white sauce based doesn't matter, it will still freeze), then to serve defrost and heat up the filling, and cook a puff pastry (or shortcrust) pastry top the size of the top of your pie dish, and place it on top once cooked. This stops the pastry going soggy.

Or, you can make a chicken pie like a fish pie, with a mash topping, in my family a mix of potato and swede mash is very popular with chicken pie. The assembled pie can be frozen mash and all.
