a) follow their instructions
b) think feck it and eat it anyway on day 3

defo eat it on day 3. They're just guidelines, aren't they? And its wrapped in the fridge.

Disclaimer: I don't eat meat. I feed it to others on the third day!

It's ham! It's naturally preserved! That's what ham IS.

I bought a whole chorizo in its packaging from the deli the other day. The tag (still on the chorizo packet) said BBE Feb 2010 or something. The printed label stuck on by the deli lady said "EAT ON DAY OF PURCHASE".

If it smells okay, i think you can eat it. That has always been my mantra and i have had food poisoning twice in twenty years - once from a tomato (cutting mold off didn't work) and once from a cup cake.

I always think ham smells of poo when you first open the packet, regardless of freshness.

Anyone?

(Oh, and in answer to op, I'd eat it if it smelt ok).

I buy ham from a deli and it lasts for ages. Is there any reason why packaged ham has the two day guidance? Is it something to do with the protective atmosphere that you sometimes see mentioned?

Why is it so blardy hard to find nice ham. Every pack in the supermarket seems to have the dreaded words "formed" on it

What is formed ham? Because it doesn't sound good. It sounds reconstituted and yukky.

i think they chop it all up, add water and crap to it to make it nice and square shaped and then sell it
so you would think with all the additives in it, it would be edible for years!
