What can I do with turkey escalopes?

We have some defrosting for dinner. We probably have enough for 2 days worth as I THINK there are about 4 in the pack but can't really tell. It is just me and DH and then DD who will have a little bit for dinner tomorrow (15 months).

Was thinking I could just cover in breadcrumbs? Would that work ok? Or is there anything else I can do?

breadcrumbs can be mixed with stuff like pesto/garlic butter/herbs/spices to make them a bit more interesting. Escalopes are very well suited to breadcrumbing.

Or you could slice up and stirfry.

Or cordon bleu it - the recipe says pork but pretty sure I've had it with turkey.

I always slice and stir-fry - just add whatever veg and noodles, then sprinkle with soy sauce.
