I roasted a chicken - now what?

I'll boil the bones and try to make stock, but what should I do with the leftover meat?

Ideally I'd like suggestions that involve things I already have in my cupboard, and things that can either be frozen once made or that will last for a few days.

What's in your cupboard?

Stir-fry.
Risotto.
Chicken and mushroom pasta.
Chicken pie.

How long would the meat last if I just put it in the fridge? I love risotto but that's not the kind of thing that keeps, so I'd have to keep the meat and then make the risotto hen I wanted it, right?

I've never made a meat pie before , how do I do it?

It depends how much you have. These are the main things I do:

  1. Curry.
  2. Lemon chicken rice.
  3. Chicken soup.

If it's a big chicken I might have enough to do all 3! Also use for chicken sandwiches for dd's lunch.

DP has gone off with a big chicken sandwich today, we've probably got enough for one more nice sandwich and one good thing off the list.

You could freeze the meat and the stock if you don't want it now.

I'd quite like to make something now and then freeze it or keep it in the fridge for a couple of days, but its good to know that I can freeze it all OrmIrian.

My quick chicken & Mushroom Pie

1 Chopped onion
Left over chicken
Sliced mushrooms
1 Tin of condensed mushroom soup.
A couple of handfull of frozen veg.
water or chicken stock about 1/2 pint.
1 packet of pastry (either puff ot shortcrust)

  1. Fry chopped onion in a little oil for 5 mins.
  1. Add chopped mushroom and cook for 5mins
  1. Add mushroom soup and half the stock and bring to the boil.
  1. Add chopped chicken chunks and frozen veg and simmer for 30 mins. You may need to add more stock if you think the liquid is to thick.

Leave to cool and either make in to a pie to cook today or freeze the mixture to use another time.

I normal cook for 40 - 50 mins at gas 4/5.

Thanks for all the ideas.

I think for now I'll just be lazy and do a curry, have osme for my lunch and freeze the rest. But now I have lots of ideas of things to do next time.

you can make croquets.
Just make some bechamel, mix in finelychopped öeftover chicken and leave in fridge for few hours.
Once cold, cover in egg and breadcrumbs and fry.
Delicous warm or cold. - great fingerfood!

sorry, missed out vital step! once cold, make small meatballs and cover in egg and breadcrumbs!
