What to do with pork fillet??

I have a pork fillet which i have taken out of the freezer to defrost for 2moros tea. But I dont really know wat to do with it. I was thinking of making some sort of spicy rub for it - but I wouldnt know what to put in it??

Has anybody got any ideas??

very tasty, was stuck last month as i bulk bought pork fillets on sale and got bored of just roasting them with veg.

although, if you haven't had it 3 times in 2 weeks roasting in the oven in some butter and oil, with raost potatoes and roast root veg and gravy is also very tasty and dead simple.

Is that tenderloin?

We slice it, fry it with onions and chopped apple, then chuck in some cream at the last minute.

DH has been known to do it with cayenne pepper as well.

I bought some yesterday and am making a pork stir fry tomorrow. Have sliced the pork thinly and it is sitting marinading in the fridge in some lime juice, spices, sesame oil and salt. Bought a pack of stir fry veg and am going to use a good (shop bought) Thai spice paste and fry it all up.

Mince them and make a meatloaf. Just add 2 slices of bread, an oinion, salt and pepper and bake in a loaf tin for 1/2 an hour.

fry chopped onions with spoonful for paprika

toss in and fry pork for a few mins either side

add spoonful of tomato puree and half cup sherry

cover with stock and simmer for40mins- an hour

Last time I did pork fillet, I marinated it for a few hours in a mixture of olive oil, grated ginger, garlic and then roasted it and it was lovely.

slice fillet, fry, make a sauce with creme fraiche mustard, mushrooms and white wine
