Ideas for leftover shredded pork?

I know this thread has kind of been done to death but my leftover pork has been shredded. It was a shoulder that we roasted overnight on the slow cook setting on the oven. It was delish but it means I can't cube it to put in a stir fry etc. Any ideas on what to do with it? We've frozen some in leftover gravy but would like to do something different with the rest.

I think you could still put it in a stir fry but it would be shredded and not cubed.

Do exactly as you would with a stirfry and stir the pork in at the end.

Use the pork to replace crispy duck in some chinese style pancakes or make tortilla wraps with shredded pork and say roasted peppers

Last time we had the same (shredded pork) I made a goulash the next night. Just made a tomato/paprika type sauce and had it with rice with a dollop of sour cream on top - really nice!

we made gorgeous chinese wraps with ours last time - stir fry veg and pork with sweet chilli sauce and some hoi sin, wrap and nom.
