Has anyone any simple receipes using green lentil suitable for me and my 13 month olds lunch?

For lunch - soup. Chop an onion and brown in a pan with olive oil. Add some stock and stir to dislodge all the sticky, tasty bits. Throw in a handful of green lentils and bring to the boil. Add about a pint more stock and the juice of a lemon, cover and simmer for 20mins. Remove from heat and blend until smooth. Return to pan and warm through. Serve with a shed load of crusty bread. Yum

Thanks for the recipe ShyTalk. I made it today for mine and DD's lunch and it was lush! The only problem being I didnt make enough. next time I will make loads and freeze it.
