Don't know how to spell it let alone cook it - Ratatouille recipe anyone?

Does anyone have a quick and easy ratatouille recipe please?

Heat up a chopped onion in a little olive oil.

Add strips of aubergine with a little more olive oil, strips of courgette and strips of peppers in different colours.

Add a tin of chopped tomatoes and maybe some torn basil leaves.

Crush a clove or two of garlic and add to mix.

Simmer until it smells good and vegetables are soft. Tastes even better on day 2.

A development of this is to put it into an oven dish and then make some holes in it and break an egg into each hole. Top with slices of mozarella or grated cheddar and bake until eggs are cooked. Serve with rustic bread. A lovely supper.

Roughly how long does it take in the oven?

I reckon about 20 minutes at 160C if they are fairly near the top of a hot dish, but it's a little hard to judge - some guesswork and forensic work with the knife blade probaby required.
