What can I eat with couscous

I have recently discovered couscous and love it, but I'm stuck what to have with it?

What would you have with it, both meat and vegetable wise.

lamb is good with cous-cous. Look up moroccan dishes, they use cous-cous a lot

Left over roasted (or just cooked, don;t have to be roasted ) veg are nice. and make the cous cous with veg stock (cube is ok) instead of water, it's nice.

bat 2 chicken breasts out between two bits of greaseproof (so they are quite thin). Prick them with a fork. Stir a big tablespoon of pataks curry paste into a big tub of natural bio yogurt and pour over the breasts. Leave them for an hour or so, then take them out and cook them under a hot grill for 15 mins or so. Serve with couscous.

Finely chopped tomato, cucumber, spring onion and green or black olives, with vinaigrette (sp?) stirred through. Mmmmm.

Couscous and roasted veg salad is nice. Just cook couscous and roast some peppers, courgettes, red onion, tomoatoes etc. Mix it all togetehr, leave it to cool and add a bit of oil, vinegar and lemon juice. Mmmm

A nice mild stew of chickpeas, sweet potatoes, onions, red peppers and plenty of garlic, braised very gently, is a delicious veggy meal.
Alternative you could have some nice pink lamb kebabs with rosemary...

2 fab recipes.

one is a cous cous salad - grill asparagus spears and slices of yellow pepper (peel skin off after) and courgette, and allow to cool. add to cooled cous cous along with lots of chopped flat leaf parsley, coriander and mint. squeeze lemon ove and serve with yoghurt and mint sauce.

other is a main meal - put chicken breasts in an ovenproof dish along with green olives, capers, pitted prunes, apricot halves, bay leaves, oregano, garlic, white wine vinegar, lots of olive oil and white wine. cook for 45 mins and serve with cous cous (lemon juice, olive oil, salt and pepper on cous cous). yum. easiest dinner party reipe ever.

If you're feeling lazy, stir in a few tablespoons of tomato chutney and some sweetcorn. great with BBQ chicken legs.
