Sausage Rolls help

Can anyone tell me how to make my own sausage rolls please - I have sausage meat - or do I need actual sausages? What kind of pastry is best and how long etc?

my dad makes the - he says they work best with shop bought puff pastry.

sausagemeat fine.

roll pastry in big strip, put sausagemeat in and glue with egg, roll over and glazr with egg and cook on high for 20 mins.

My mum always buys really good butcher's sausages and then squeezes the sausage meat out of them to fill the puff pastry (shop bought).

They look like you've taken ages to make, when actually, they're really simple!

Well I have sausage meat so I guess I will use that this time and get sausages next time.
Should I put any herbs in with it - any ideas as to which ones to give it a bit of flavour.

For the sausagemeat stuff made from a mixture of belly and shoulder works well. Definitely cook them on baking paper to absorb some of the fat so the bottom doesn't end up greasy.
Herbs: sage or thyme.
DH (the sausage roll fan of the house) has been using this recipe (halfway down) and says they are yummy - I'm veggie so can't testify to this
