Dh returned from farmers' market with a pack of meat he said was mixed game - he said he 'thinks' its rabbit/venison/pheasant. So I have bunged it into the slow cooker along with:

Leeks
Onions
Carrots
Garlic
Bay leaf
Red wine
Beef stock
Dried thyme
Salt + pepper.

What else do you think would be nice to add to it? I wondered about butter beans....

oooo, I'd chuck in some chunks of
celery or swede or parsnip.
Butter beans would be nice
dh (the chef round these parts) says nothing except a spoonful of redcurrant jelly

Yes I had thought about nipping out for some mushrooms.... I've got bulgur wheat but have only ever eaten it like couscous IYSWIM. Not sure how it would behave in a stew!
