The Indy recipe looks about right. I make it from my Mum's recipe which is the same methodology. You bake it in a water bath - comes out as a light sponge with a lemony custardy sauce beneath. Its a regular Sunday offering round ours.

This is a suet pudding rather than sponge, but it's gorgeous....

Oh- missed the souffle dish bit.

OK I'll dash and get my Mums recipe.....

Juice & zest of 1 lemon
2 oz butter
4 oz sugar
2 eggs
1/2 pint milk
2 oz self raising flour

Cream butter, sugar and zest until light and fluffy.
Add egg yoilks and beat well.
Stir in milk, lemon juice and flour.
Whisk egg whites into stiff peaks and fold in. POur mixture into greased ovenproof dish (2.5 pints)
Stand dish in a shallow tin of water and cook near top of the oven at 200 for 45 mins or until top is set abnd firm to the touch.

Hope this is the one you wanted.
