Low Fat inspiration needed

I am cooking lunch on Friday for 7 post-natal mummies, who are all on diets or watching their weight. I would like to do something different from the usual soup/salad/jackets/baked apples that we normally have. And there are 3 veggies amongst us. (incuding me, so would prefer veggie ideas).

Any ideas ?

How about roast veggie fajitas? You could roast courgettes,onions and peppers with minimal oil.

Make a salsa with tinned tomatoes, finely diced red onions, finely diced chilli and fresh coriander and then serve the whole lot with fat free yoghurt.

Roast red peppers with a low fat filling (maybe with cous cous and veg or lentils)?

Is cost a problem? If not maybe salmon fillets with veg?

Liking veg fajitas, roast peppers, roast veg etc.

Cost not too much of a problem, but the veggies won't eat fish!
