i have a recipe that requires buttermilk, the trouble is i can not find any anywhere, is there an alternative that i could use? i have already soaked my butterbeans and they will be wated if i don't use the recipe.

Yes, just put a squeeze of lemon juice into ordinary milk (about 1tsp per 300ml) and let it stand for 15-20 min before using.

I just used low-fat yoghurt, well stirred.

Any of those will work, it's the acidity you are after.
