I make mine in a dish. Fry up my mushrooms, onions, courgettes, peppers, ham, whatever you have decaying in the fridge want to put in it, put it all into an ovenproof dish, pour beaten eggs over it, top with grated cheese and bung in the oven till golden brown and the middle is set. Yum!

mmm, we love fritatta, make a winter one with potatoes, kumara, squash, carrots, onions, spinach (pre-cooking everything) and a more summer one with onions, potatoes, peppers etc anything goes. Salt and pepper (or can be a bit bland). I don't top mine with cheese though.

omelette but nasty. Has potato in it I think. Waste of a good egg!

StealthPolarBear · 18/03/2009 16:50

ladymariner - that's just an omelette!

Here's how I do it

I peel and slice 2 medium sized potatoes thinly and an onion.
Fry then gently in some oil till the potatoes are almost cooked.
In a bowl beat 4 eggs and add the potato and onions individually so they don't stick together.

Leave for 10 mins to coat evenly in the egg.

Put some more oil in frying pan and pour in egg mix cook till undersides cooked thoroughly then put under the grill to cook top half.

I did this for Spanish day at DD's international Week at school and it was a hit with all the children

Even my Ds loves it, and he hates egg normally.
