If I make the sponges for a Victoria Sponge tomorrow morning, wrap them and put them in the fridge...

... will they be okay if I take them out Sunday morning?

I normally make 3-4 Viccy sponges for our church's cake sale, but I usually do it the Saturday evening, for sale after the 10.30 mass the next day.

However, tomorrow night I'm out gallivanting, so if I made them Saturday morning, wrapped them in foil and put them in the fridge, do you think they would keep okay to be sandwiched together on Sunday morning?

I'm a bit wary of making them and just slinging them in a tin in case they go stale...

Hi

The fridge might dry them out they should be fine. I quite often make mine the day before they are needed and just put them in a big plastic/tupperware box.

I am sure they will be just as nice
