Sponge or madeira?

Am debating having a total practise run since I've no other family birthdays to make for until this one's needed in July. What do you think?

The madeira seemed a bit firmer to me when I made it for noah's ark, which is why I wondered whether it would make a lot of difference for this one

Thats true.

A firmer cake would probably make the moulding a little easier.

I may try both, just as an excuse for lots of cake
