ideas or recipes for vegetarian sausages roll please?

Would like to do sausage rolls for dd's birthday party but don't want to put crappy sausage meat in them - does anyone have ideas for a nice veegtarian filling (or a meat one that's nicer quality ). Thanks.

I buy sausages or sausage meat from our very reliable butcher.

I've made Delia's vegetarian rolls before and they are lovely (and we're not vegetarian)

I've had tuna-rolls before but haven't ever made them, maybe google will throw up a recipe?
